Ya’ll! Our menu plan got soooo messed up last week! But this is the beauty of the plan. It is in place to use and keep you organized when it is needed, but you have control over the situation. If there is need for change, because of your organization, you are able to handle it. JP has worked some crazy hours over the last two weeks, days and nights, with only a few hours off in between. Sunday we were able to out to dinner at a Japanese restaurant and had tons of left-overs, so we ate those Monday. This past week he has had to work straight through, 7 am to 1 am! Tuesday he called and said that he had to work nights again, but that he could have dinner with us, so we went out to eat. Then Wednesday since it was just me and the little guy, I made pancakes, eggs, and bacon and we ate and watched Pete’s Dragon. It was a little sad, but very cute, movie.
So we will have a few of those meals this week instead. I really hope that this week is a little more calm, with my amazing husband home a little more!
Sunday- Left Overs, Turkey and Cheese Wraps, or eat out
Monday – Stir-Fry with Chicken and Quinoa
Tuesday – Southwestern Salad
Wednesday – Baked Salmon, Roasted Potatoes, Zoodles, and Steamed Broccoli
Friday – Pizza at Home
Saturday – Left-Overs, Wraps, or Out to Eat
Remember, it is very necessary to plan if you want an organized and stress free-ish life, but you also have to be flexible and roll with the punches some times. 🙂

Last week I tried the Fiesta Casserole from Dreams and Caffeine and we LOVED it! It a great way to use up left-over chili and those miscellaneous bags of chips and cheese. I think it will be our new recipe, when we have Chili I always make enough for two days. Now on our day 2 we will have this! Thanks so much Lisa for sharing!!
